EINKORN BLUEBERRY STREUSEL MUFFIN RECIPE


INGREDIENTS

FOR THE MUFFINS:


  • 1 ½ cups (260g) blueberries, fresh or frozen


  • 2 ½ cups (300 g) Jovial All-Purpose Einkorn Flour, or 3 cups (288g) Jovial Whole Grain Einkorn Flour plus more to coat the blueberries


  • 2 teaspoons baking powder


  • ½ teaspoon baking soda


  • ¼ teaspoon kosher salt


  • 6 tablespoons (84g) unsalted butter, melted and cooled


  • 2 large eggs


  • ½ cup (100g) sugar


  • 1 cup (220g) buttermilk


  • 1 teaspoon vanilla extract


  • 1 teaspoon lemon zest


FOR THE STREUSEL TOPPING:


  • ½ cup (33g) rolled oats  


  • ¼ cup (30g) Jovial All-Purpose Einkorn Flour or ¼ cup (24g) Jovial Whole Grain Einkorn Flour


  • ¼ cup (50g) brown sugar


2 tablespoons unsalted butter, cut into small cubes
